Shiraz Cabernet Merlot
Blending Shiraz and Cabernet Sauvignon from the elevated, narrow rows of Penny's Hill Vineyard with juicy Merlot grown on the black biscay soils of Goss Corner Vineyard, we produce 'The Specialized'. A wine of special character; showing volume, structure and approachability.

Shiraz is sourced from the narrow planted, high density vines of the Penny’s Hill Vineyard and is combined with Cabernet Sauvignon and Merlot from our Goss Corner Vineyard grown on the black, cracking ‘Bay of Biscay’ clay soil. Hand-tended, parcels were harvested separately between late February and early March 2015.
Each parcel was vinified separately in the winery. Fruit was destemmed then crushed and fermented on skins for 7-10 days to extract sufficient colour, flavour and tannin. Post pressing, the wine underwent secondary fermentation and maturation in oak barrels, of which 25% were new oak. After 16 months of maturation and when perfect balance was obtained for each parcel, the wine was blended. The wine was bottled in September 2016.
A seamless wine showing an array of dark fruit, mulberry and blackberry with hints of mocha, cedar and oak notes all adding complexity. The palate continues to shine and offers dark, spicy Shiraz fruit, balanced perfectly by fine, long Cabernet Sauvignon tannins and soft, juicy Merlot characters.The French oak adds depth and class to produce a wine with persistence and poise.
Ready to drink, but will cellar for 6-8 years.

A contribution from each variety in terms of structure, aromas and flavours, providing a softly textured but generous helping of red fruit, earthy spice and milky chocolate. The subtle French oak is a well judged seasoning".
