PENNY'S HILL 'THE SPECIALIZED' SHIRAZ / CABERNET / MERLOT 2014

THE WINE

Blending Shiraz and Cabernet Sauvignon from the elevated, narrow rows of Penny’s Hill Vineyard with juicy Merlot grown on the black ‘Bay of Biscay’ soils of Goss Corner Vineyard, produces ‘The Specialized’.  A wine of special character; showing volume, structure and approachability.

THE VINEYARDS

Shiraz and Cabernet from the narrow planted, high density vines of the Penny’s Hill Vineyard are combined with Merlot from the Goss Corner Vineyard growing on the black, cracking ‘Bay of Biscay’ and brown loam soils immediately south of the Penny’s Hill Cellars. Hand-tended, parcels were harvested in March 2014.

VINIFICATION

Each parcel was vinified separately in the winery. Fruit was destemmed then crushed and fermented on skins for 7-10 days to extract sufficient colour, flavour and tannin. Post pressing, the wine underwent secondary fermentation and maturation in oak barrels, of which 30% were new oak. After 16 months of maturation, perfect balance was obtained for each parcel and the wine was blended. Bottling occured in October 2015.

BOUQUET
Lifted dark plum and blueberry fruits with oak spice, dark chocolate and cedary oak.

PALATE
Harmoniously blended, the palate shows an abundance of dark bramble fruits with layers of mocha, spice and earthy notes. Fine long tannins from the cabernet sauvignon are perfectly balanced with elegant fruit and classy French oak to produce a wine of persistence and poise.
