PENNY'S HILL 'EDWARDS ROAD' CABERNET 2012

THE WINE

Paying tribute to the Edwards, another great, old, local farming family, the 2012 Penny’s Hill Cabernet Sauvignon plantings are bordered on the foothills to the south of the vineyard by Edwards Road. Our sixth dedicated Penny’s Hill Cabernet Sauvignon, this wine celebrates the variety at its McLaren Vale best, greatly enhancing the stature of the brand’s hand-crafted wines.

THE VINEYARDS

From narow-planted rows on a five acre plot, bordered by dense revegetated bush and bird song aplenty, Penny’s Hill Cabernet Sauvignon was planted in 1993. Hand-tended and low yielding, the vines on loamy top soil over a clay base, run North-South sloping down from the vineyard’s highest point. Fruit was picked late March.

VINIFICATION

Destemmed and crushed, fruit parcels were separately fermented on skins over seven days to peak temperatures of 28- 30°C. Subsequent free-run juice and pressings made it to only the very best French and American barrels (30 % new oak with the remaining being three year old) for approximately 15 months with regular testing to achieve the correct strength and optimum flavour. Once reached, parcels were blended for an exact integration of complementary characters, prior to bottling.

BOUQUET
Rich, red fruity nose with spice and savoury earthiness in the glass. Hints of black cherry, plum and a caramel sweetness are embedded in the many layers of complexity.

PALATE
Extraordinarily generous on the palate, the 2012 Cabernet Sauvignon exudes McLaren Vale Cabernet vegetal qualities, finishing with stunningly drying tannins and a length to charm.
